In Ushibuka, the westernmost part of Amakusa, a dashi specialist manufacturer that has been producing zatsubushi, the base of delicious dashi, for three generations has powdered the zatsubushi as a measure to combat food waste, and added fresh lotus root grown by young farmers in Kumamoto to create a delicious and gentle powdered dashi soup that combines the bounty of Kumamoto's sea and land with the aroma of yuzu.

The deliciousness of lotus root soup can be used not only as soup, but also in a variety of dishes.

It can be used in endless ways, including vegetable soup, dashi chazuke, sprinkling salt on grilled fish, seasoning meat dishes, and even on fried chicken or french fries.
